It will depend on both your environmental conditions and personal preference.
Hanging a plant whole in a lower than optimal dry room can help prolong the dry time for a better product.
If you have higher humidity than optimal then trimming fans off before hanging or hanging the plant in pieces should help. Sometimes a combination of both.
Always made me nervous hanging the whole plant for fear of molding

If you have proper temp and RH conditions with slight air movement it shouldn't be an issue.

Environment and season play a huge role in what should be done.
Just curious, always done a pre trim just wasn't sure if there were any benefits or not leaving all foliage on during process
Well said, i usually trim all fan leafs ( Larger leafs) then hang the branches to dry, after the drying process is complete i'd do further trimming right before jarring them to cure. It depends on your environment in the end, more leafs = more moisture = more dry time.

I prefer a close wet trim myself. I like to touch the plant once at harvest. I trim all fans and then take off all the sugar leaves and save those for dry ice hash. I don't want to come back through with the snippers a second time. But some like to dry their weed differently and that all fine. I just think it's more work. One thing with a close trim at harvest is that it will dry faster so you have to keep that in mind if you trim to finished product on the first pass.
Either way works. Try a close trim with some and leave more foliage on some. Dry both ways and see which method you like better. Just don't overdry or jar too wet and you'll be fine.
