Taproot disappeared?

I have germinated many seeds with 100% success so far, either directly in soil or in soil plugs.
I have never had this happen before, but both of my seeds grew their taproot up out of the hole through the thin layer of soil I always put over it.

I didn't think much of it since the root should follow gravity and anchor itself in the soil, so I covered them both with a little more soil to keep the roots fresh.

A day later one of them popped out looking healthy:mrgreen:, the other one didn't. I waited another day, until today, and still no sign, since the soil I put down afterwards was very loose, I moved it a little to the side and noticed that the root, which was bigger and more visible than the other seed, was suddenly gone, with the seed wedged into the side of the plug.

After taking some close up shots which I will attach, I might be able to see the root very slightly where the seed becomes brighter? I just can't imagine how it could have moved that much in one night.

There are also a lot of white spots that I've never really noticed before, probably the soil, but not that I've been paying attention. Could this be mold killing the root? As usual, I had a cup over them until I saw them emerge, then I switched to a "dome" made with some plastic wrap.
I added mycorrhiza, but I have no idea how it looks once it's in the soil.
