i have a plant in low stress training, it has a couple stalks coming out of the side...now i was just wondering what will happen if i take it out of LST and let it go normal (upright) will this cause any defects in the new stalks?

your plant should revert to upright,I have had great success with LST,and after 10-15 days,you should start to see slight upward growth,with more pronounced filling.

the branches go to a sidways "bushing"growth but the main cola will get another few inches,thats all.I top mine along with the LST,so I get some bushy girls.

if your going through LST now,and are close to flowering,STOP.You will stress the plant too much,a good rule of thumb for me is to stop all training a week in advance of flowering,so the plant can now concentrate all of its energy to budding,not repairing damaged or lost cells,i.e-LST,topping,etc.,it works for me and my yield per plant increases by 12-18 grams.LSt one week,then I top them the next,then LST,two weeks off,then it's off to the flowering room.
