Anyone know why this newer growth is so pale? Is it because it grew so fast and hasn't darkened yet? What would cause such large gaps between nodes?

Large gaps between nodes is usually a lack of light. Seeing as your outside I would say maybe too shaded where the plant is.

the lighter green could be a nutrient issue but I would take care of those insects on the lower portion of your plant first.

Maybe the giant spider on it is eating those bugs...throw some lady bugs in there too
 
I’ve got one outdoors also, and my new growth is lighter green colored, and I think it’s because it’s growing rapidly, and the new growth will darken up as it ages. I think it’s normal.

No bugs just dirt splashed up from watering.

Well if they are mites, you're probably not gonna see them with your bare eyes at arms length.

First two pics you posted up there...zoom in on that bottom fan leaf up near the stem...looks like something has been chewing on them...the white "stuff" or can it be wiped off?
 
I hear people talk about trimming or lopping?!?! Can this be kept shorter with LST? Thanks

Yes, it can...take the top and bend it down near the ground and tie it to a stake. Find a location you where you want to bend it and squeeze the stem back and forth, side to side and soften it up - you don't want to split it when you bend it over, so work it until it is soft and flops over. This will allow the lower nodes to grow up and out causing a bushier shape to develop.
