Bend the stalks downwards and tie the ends down, or bend them over sideways and tie them down to give yourself a shorter plant profile. They will adjust and grow “right”. You’ll also get a wider canopy with more exposed bud sites.

I would try to offset your pots, and take your bends towards the gap you make. Perhaps something like this. Be sure to crush that stalk good so it doesn't snap, good luck!

Try doing it where the 90 degree bent will result in those mains been level with those lower buds.

It definitely takes patience if the stems are hard, sometimes you really gotta work it between your thumb and index finger knuckle for a while to break up the fibers of the stem. But as long as the stems aren't actually woody, which yours are not, it can be done.
You can find tutorials for doing this on YouTube, but from my experience - Most important thing is to focus on crushing the stem first. If you try to bend it before it's crushed, you risk breaking it. Once it's properly crushed it should just flop over on it's own. Second most important thing is the direction you squeeze it. You want to work in one direction, and orient your fingers/whatever you're using to crush it perpendicular to the direction you want it to flop. Third most important thing is having something ready to support it, like a bamboo stake and string. Sometimes long stems like to flop over past 90 degrees and point downward, so you may need to support them for a few days while they harden back up.
It can feel kinda sketchy the first time you do it, but once you do it successfully it becomes really easy. You can practice on the side branches first until you get the hang of it, before doing it to the main stem. And the plants will love it, they'll grow a big knuckle at the joint and shouldn't miss a beat growth-wise. Good luck!
