The reason plants turn purple when it's cold is called nutrient lockout.
Without the nutrients the plant is unable to produce chlorophyll (green).
The colors you are seeing have been there all along. Most strains have yellows and oranges but some have reds and purples. My Blueberry looks almost blue!
You don't have to lower the temps to create nutrient lockout. You can leach and flush your plants for the same results. It also makes your buds taste great!
I flush with Clearex for 24hrs. then straight water for two weeks. By the time harvest comes my plants turn all kinds of colors.
