Potentiometer help

So I'm building 2 9 cob fixtures and Im wondering how to dim them. Each fixture has 3 drivers. I want to be able to dim each fixture but I'm not sure of the size potentiometer. Running 9 veros at 1750.
 
Three drivers- 100k pot per driver, 50k for 2 drivers, 33k for 3 drivers, and so on. If you have multiple drivers on a single dimmer and one driver fails, the whole light will go into limp mode (30 or less watts). You can also go with a 3 way switch and put different resistors on each setting (High, medium, low).
The dimmers I use have an on/off switch (off= full power) and cost from $15-$30 each, but have identical sweep. Cheap one's will be all over the place. This is what a quality potentiometer looks like.
