I'm in the same boat. When you've got four mature plants in your garden, and are only weeks from harvest it can be nerve racking.
My tactic is this...
1. I grow a vegetable garden so I have an excuse to be out a lot. It provides cover, too. I have two seperate gardens, the other I use for weed mostly. I'm in my 60s and retired, so I'm here almost all the time. If you can keep a dog, do it. You could also set up a camera with some sort of notification to your phone if it activates. They have game cameras that do that, I think.
2. I stay on good terms with all my neighbors. The one that I know smokes, I give him free weed. There's a field behind my yard, and I've talked to the farmer. I suspect he is more interested in learning, than stealing from me. The old guy behind me has never even taken a drink in his life, but I know his son smokes. I go over an talk to him a lot. I start tomato plants for him inside every spring.
3. Just like when I grow inside, I don't tell anyone. Not even friends, unless I know they grow, too. I grow out in the middle of nowhere, is an excuse I've used in the past.
4. I position my garden in the least visible part of my yard. I have asparagus (a perennial) planted along one edge of the garden, and along the other edge I plant a couple rows of corn. This covers my plants until August or so. Even then it's only the tops that show, and 99% of people don't notice.
5. My experience is the stink cloud you can get from these plants only develops when the wind is dead calm, and only during the last four weeks of flowering. There are exceptions, but thats 90% of it. That cloud only travels about 100 feet from the plant. It only develops at late night/early morning. It smells a lot like a skunk smells when it is traveling though. It can be an intense smell, though, very skunk like.
6. This year will be my 6th outdoors, and I've had no issue with theft. When I grow outdoors I yield 6-10 lbs/yr (for 3 or 4 plants). When I grow indoors one cycle is not enough for me to last the year. I have to get two cycles in, which is $600/cycle.
7. I try to keep at least a two year supply in the event of a failed harvest, which includes theft. I store in jars, and in my basement, so it last a couple years. I end up throwing out a lot, which is a weird feeling for sure. I threw about 6 pounds of weed in my compost last fall.
8. By growing extra I can grow a couple different genetics in the event that one is a dud. Last year one of my plants yielded crap weed (we had low 20F for a week, and it needed more time), but the other two with different genetics came out fine.
9. I tresslis my plants well, with four t-posts per plant, surrounded by a wire fence material similar to hardware cloth. This makes it more difficult to get to the plant for both deer and thieves. It's gonna make noise pulling that stuff down to get to the plants. Outdoor plants need much more support than indoor plants because they get larger, and will see 40mph winds at times.
I've often considered a greenhouse, even designed one a few years ago. The issue is July here is brutal. The design I made had sides that folded down, but even with that I would have to cover the top with blankets on some days. The last thing I want to do is cover my plants when they should be converting all that sun to growing. I would definitely feel safer with a greenhouse, even though they stick out. You can filter the air, as well, during the fall at night which is when the plants stink. Plus it extends the season by at least two weeks in the fall, which is really nice for MJ.
