For organic growing(usually go hydro, but want to switch) do i use dirt and water, and just dirt and water only, or is there other natural things you have to use.

Unless you compost, bagged soil will work. Don't buy Wal-mart's cheap a*s brand, it's not that good. Stay away from bagged soils that have slow release fertilizer pellets in them also.

Most soil growers, mix their soil (60 %), using a mix of peat moss (20 %), worm casting (10%) and pertilite (10%). Makes it fluffier. That way it holds water well and drains well too. Plus fluffier soil, allows Mary to spread her roots more easily.
