Just don't offer it to my wife.
She has seen a couple skinned ones hanging in the garage & it freaked her out so bad. They truly look like very angry alien humanoids without their skin & she won't touch it.

Bear meat is one of the only wild game meats I just don't care for. Everyone says they know how to cook it and it swear their recipe makes it taste good but everytime I've had it, it's greasy as hell. I donate meat to the local food kitchen every year from hunting and even they don't usually accept it. I do know some that love it, so to each their own.

Lots of the kitchens won't accept it as you have to treat it like pork. NO hanging to age like a deer, process immediatly or it will go rancid quickly & they won't know how it was treated prior to drop-off.

Oddly enough I really want a hamburger now. Or should I say Hambearger!!!! Hahahahaha. No seriously I want to eat a bear hamburger now. At least a bite. It seems that might be the most palatable. A little Worcestershire sauce some pepper. Yeah.

I've had bear tenderloins cooked in cubes like marshmellows, and hambeargers.
Greasy is definitely the defining taste, searing fire and pepper is probably the best way for me to cook it.

Yeah, I just like to try anything once. Besides meth. I'm pretty sure I know how that tastes. Like cigarettes and broken dreams.
Properly killed and cooked,bear is delicious. Burger is like beef, but more subtle and wild.The roasts have to be boiled or pressure cooked with a water change and produce a tender beef consistency but sweeter and less bland.With bear,they are more individuals and some are strong, but most are really good here.
