The marbling in that meat is very good and it comes from an inexpensive cut of beef. Breaking down the primal muscles yourself yields treasures you don't typically get otherwise.

What Is Denver Steak?
Denver steaks are made from the serratus ventralis muscle, which comes from the under blade portion of the chuck roll. The beef chuck is the shoulder of the animal and it gets a lot of exercise. That means most of the muscles in the beef chuck are pretty tough. The serratis ventralis, however, is one of the exceptions; it's situated directly underneath the shoulder blade bone and doesn't get used much. This makes it one of the more tender muscles in the beef chuck.

I'll do that. We still have 3 or 4 bags left in the freezer before my niece brings me my yearly gallon in Jan.
You just sear them and add to them on top? Before or after the hollandaise?
In the interest of science, and eating more scallops, you should try it both ways and both ways at the same time, ie scallops before and after :D

Thanks a lot. Now I want scallops and seafood. When I grew up there were always live lobsters in the Safeway's and most other grocery stores. What has this world come to, :wall:

At least us less fortunate drylanders have the fish truck, :lol:.
