Thanks. It's a pretty easy dish to make just have to do some prep work. Then it's just assembling it. You can't see it but there's a bunch of cilantro and mint in it. Pour some nuoc cham over it and it's a flavor explosion of salty, sweet, tangy, spicy. I put a decent amount of sliced Thai chiles in the nuoc cham.
One of my goals is to travel through SE Asia on a food vacation. Vietnam, Laos, Cambodia, and Thailand. One of these days.
Have you tried a dish called Cha ca La Vong? Famous in Hanoi I believe.
It’s essentially shallow fried turmeric fish chunks in lime, fish sauce, chillis, peanuts, dill, coriander and mint. Very nice!

No I haven't. I had to look it up and it sounds really good. I bookmarked a couple recipes and videos.
Anything with lime, fish sauce, chillis, peanuts, dill, coriander and mint is going to be good. I have everything but the fish. I have some salmon in the freezer but I'll get some cod and make this in the near future.
