Need Someone to Shed Some Light on Hydro for Me

So I've been growing in soil for a little while. Feel fairly confident in my soil growing abilities. I've got my favorite strains and now exactly how long each takes to meet me desired outcome. Now, typically for me I take my clones and run them in a DWC like setup to get them to root then I transfer them to soil. I found this to be the best way to get 100% to root. Each plants spends about 4 weeks in veg then to my flowering room for 8 to 10 weeks. I do have two areas for growing my veg room runs with MH lights on an 18/6 cycle and the flowering room running HPS on 12/12.

Now for my question:
I'm curious about the various hydro options. I tried the DWC method in the past hence my current cloning method. My biggest issue is with checking individual buckets every day, etc. I think I would feel much more confident with a resevoir.

That leads me to aero or ebb and flow. I've noticed a few different retail and diy options for both, but I'm not exactly sure how they are used.

With an ebb and flow table it looks like it's full of hydroton or some growing medium and the plants root in the table and the table floods, etc. How does the veg and flowering mode work for this setup? Do i move the whole table? Do I move individual plants? I'm used to moving individual plants from one room to another so I'm not really understanding the method of changing seasons.

I guess the same holds true for me with aero as far as moving. I would have a real problem moving a whole table from one room to another also I just don't see how either of these methods support a fully vegged plant. I typically veg to 2 feet with a final plant around 5 feet. Obviously, that's not going to work in the above mentioned hydro setups.

Any light you guys could shed would be greatly appreciated. I'm sure once I get some explanations I will laugh at my stupidity and lack of understanding.
