I always go until the stems crack regardless. But some go earlier. I've had poor results going too soon so I like to keep it safe and go for the crack. That will always take several weeks in my basement which is dry.
You've never gotten mold only going a few days? I've had mold before after only a 7-14 days on the vine and burping. That was several years back so I keep it safe and always get great flavor and aroma.

No bro, no mold. Although I have questioned the smell of some outdoor I have now. Smells great after I grind it in the jar it is questionable. Once you find that 'sweet spot' just maintain it. I just jarred up some super silver haze that hung for 2 days!
