Hmmmm the mesh thing may be a good idea if its as bad as you say with pollen floating around everywhere. But i would take like a polly tunnel green house approach using the mesh instead of plastic, maybe set up some fans inside to aid with air flow (could even get real fancy an get a indoor/hydroponic in line fan and carbon filter and pump nice fresh air in). Set up like a double door entry with a bay/space in between the two doors with some mister/spray sprinklers on the roof.
So like you enter one door, turn in the sprinklers/misters to knock all the pollen out of the air and i figure moisture will make any pollen stick to your clothes instead of float about. Then enter your grow through the second door
Pluss the mesh cover will give you a curtain amount of stealth, nobody will be able to see your grow
