So I'm currently running my light cycle on 18/6 from 2 am - 8 pm. If I wanted to switch to where I was running the lights from 2 pm - 8 am would it be alright if I just left the lights on until those times the next day or would that throw the plants off..? I realized it's probably better for my schedule if I did that..

Then why you flippin to 12-12 already?

Make the 12-12 whatever times you want, just finish an 18 or 6 and go into a 12.

The way I grow, I leave the lights on for 24 hours, for the first 1 to 2 weeks. After 2 weeks I put my plants on a 18/6 light cycle while using T5's for the first month before switching to a metal halide. With your plants already being on an 18/6 2a to 8p, if you want to switch the time. Just leave them on until 8a the next day, you won't do any harm.

It won't mess with them if you switch. Just leave the lights on not off. You may want to run your light at the cooler part of the day (after dark into the a.m.). This will keep temps from fluctuating as much.

Yeah just let the lights run till you want the lights off and then badaboom shut them off and start your 12/12. Good Luck
