I will start off with my BBQ home made burger...I actually sold these at a Fry Stand for a few years and were very popular.

My Fry stand ones were slightly different in that I used only plain ground beef.

2Lbs of ground sirloin 1 lb of regular ground beef.......2 full bulbs of finely chopped elephant garlic(the huge stuff)....2 -3 handfuls of Christie swiss cheese crackers crushed to crumbs. 2 eggs...a squirt of Maggi's.....Fresh cracked pepper....A generous shaking of Club house Garlic plus. A small amount of Dianas cracked peppar Gourmet BBQ sauce...( not too much or it will just burn)
Add it all together in a big bowl and mix it then form your burgers....Simple and quik......I form my patties big and flat so when they cook they turn out perfect bun size:D Shouldn't have to say this but wash your hands and cut your fuckin fingernails before sticking your meathooks into the burger bowl.
These can't be cooked inside its against the law and just plain stupid as fuck.

BBQ sauce of your choosing is added once they are almost done.....My BBQ has a small compartment for wood chips that I usually add some pre soaked Mesquite or Hickory chips too:mrgreen:

Here is another:

Best Fries in the world.

Ok start with Yukon gold potatoes peel em or wash em its up to you....For my Fry truck I left the peel on.
Cut out the bad spots if any and the eyes of the potato.
I used a big fry cutter but a knife will work too for home cooking....Cut your fries and Blanche them in hot Canola oil for roughly 5 minutes...As they start to turn golden brown pull them out and drain off the oil....Let them cool to almost room temp then stick them in the fridge over night with a covering of papertowel or clean linen cloth......Next day all you do is finish cooking them.....Make sure oil is hot enough before dropping the fries into oil. Served with real Malt Vinegar and sea salt they can't be beat....I had people lining up for these all day long.

Oh and never soak fries in water for any length of time this opens the pores of the potato and leaves pockets which fill with oil when cooked and result in a greasy fry.

my twist on nachos

Brown and crumble 1 lb of ground beef
wash and slice 4 potatoes into chips, deep fry chips until crispy
start by laying the chips down on oven safe plate or use parchmen paper on cooking sheet, add ground beef, cheese ,chopped green onion, chives
Place in oven at 350 for about 7 mins.

I created this when i as a teenager, feeds 2 people easily as a meal
Oh i use ketchup for dipping mmmmmm

You make regular hamburgers/cheeseburgers with all the normal condiments but...

Here's the kicker.

You use fry bread as the buns. If a mouth could orgasm then this burger knows it's G-spot.
