Good call on early chop, could've gotten much worse especially as things get more and more dense and tightly packed as the swelling continues. Sans the mold she still had time to rock. You can always tell done when the calyx swell up fat and pistils are not all frizzy, some strains you can take while frizzy pistils but mostly let them get juicy and swollen and pistils recede.
For the mold keep night temps close or not far from day temps and keep the humidity under control. If night temps drop far from day temps mold likes to pop up, keep a fan circulating things helps but watch those temp fluctuations.
