The thing you need to consider is when the table is full of plants or medium than space is filled and than need less water to fully fill the table.
An empty 4x8 table would need about 60-70 gal of water to be full while the same table with 72 6 inches pots will only require 40-50 gal of water to be full.
I recommend a 100 or 150gal reservoir to keep the water stable.

You can run both trays on the same reservoir with different watering cycle.
