[HELP] PH questions for soil growing

Yo RIU. I've started using soil (Foxfarm ocean forest) for my newest grow and have a few questions on PH:

When I mix food, the water (2.5g jugs from the grocery store, not distilled) I'm using is around 7 but when I add food and cal/mag it goes to about 4.6 and requires a few drops of UP, this has been consistent on all my mixes. This sound normal?
What's a good way to test the soil itself, are probe-based meters in the $100-$200 a good way to go? I've seen small dollar capsule/mix kits for soil, but something low maint/ease of use is more important to me than saving a few dollars.
Do the plants require and flushing during the grow? I used to run clear-ex in my Hydro system everytime I changed out my res.
Are the traditional methods of modifying PH such as dolomite/lemon juice reliable?

Really looking forward to not having to maintain my hydro kit anymore but not all that confident on how to garden with soil, they're only 3 weeks old and look great so wanna keep on track.

TIA!

I use FFOF as well and tested the run off of pH balanced water without nutrients in this soil, and it didn't change the pH (but please test yours, I'm sure we have different water pH levels). So I don't worry about the run off, only the water and nutrient combination I am mixing. I stay between 6.3-6.5. Having a high pH has scarred my past grows and I try to be as careful as I can be.

What exactly are you using?

As long as there is enough dolomite in the mix you shouldn't have to add pH Up to anything. You don't need to check pH or worry that much about it.

Dolomite is calcium magnesium carbonate, it neutralizes acidity as well.
