Having Trouble Diagnosing Under vs Over Watering

So it was under-watering. I have been giving much more water at a time and not letting them dry as far and they are all slowly coming back. I haven't been watering to run-off yet as i'm using very pure water and only ferted twice at very low dose, all organic so have had no need to run anything out yet. I guess I just wasn't keeping up with their growing water needs as they, grew, and for fear of over-watering was playing it too dry. Thanks for the input everyone. I can post some finished pics in this thread when they're done.

may be hard to tell from the pictures? but they were pretty overall drooping, stem included.
