Thanks man!! About how many days short was i from peak maturity??? Will taste or smell suffer from chopping early? And the humidity i dont have much control over. It varies from 57-70% i have complete control over temperature though.Those look nice, shame you can't wait an extra few days.

That link also has other good responses on methods. I would try for 50% humidity. Mold doesn't like anything below 60. 55% is nice for a slow dry.
