When do I water them last? If they are watered 3x a day. Every 8 hours. Do I stop watering the full day before harvest?

you can water up to the time you harvest it will not matter if you stop 12hrs before or water all the way to you pull them out

I keep watering as I am harvesting. It makes the leaves easier to trim when they are still firm .

First off you shouldnt be watering every 8 hours x3 a day you should never water at night during lights off.

flood x3 for 30min during lights on time. With that said i like to cut back to 1 floods on the last day.

I water/feed for 15 minutes every two hours lights on or lights off, never had root rot never had any real problems.

Do as you please but plant dont uptake during light out time so your waisting energy to flood

i water 5 times a day for 30 mins no problems yet
