Sometimes the color tends to change after you cut them off the plant. They really change colors when they are getting dry.
Dunno, you should have already cut those leaves off. It will help prevent mold when you are curing. It takes a long long time when harvesting - cutting all the leafs off. But it's well worth it when you finish the whole process. You got to have patience with this plant, if you don't have patience - this isn't your type of hobby.
