So once I do chop the girls down, given that they're relatively small plants, what's my best bet?
Just hang them upside down for a day in the shed or should I try and trim them immediately.
I've always trimmed immediately but don't really know the best practices here.

Lot of it is personal preference. For the garden where we had too much to harvest but didn't want to lose it to thieves we hung off ropes to dry for a couple weeks or however long it takes. For my personal garden I always trim and dry buds off the stem right away. Other people will do differently there is no right way only the way that works for you.

I pull all the fan leaves off and hang branch by branch, then about 3 days into the dry ill start trimming the sugar leaves,

that way the sugar leaf is sepreate from the fans, i run alot of trim for ice water hash/bho/dry sift so this works best for me. Once in down to an 80% trim ill knock the branches down into smaller pieces, as it all dires putting it closer and closer together untill its bagged to keep humidity up around 60%.

After about 7 days after chop, ill finish the rest of the trimming up, allowing you to let humidity drop to around 55%, i then jar it up 28 grams per jar and throw a 62% humidity boveda pack in

- but the main thing is to not over dry, or dry to quickly, you wanna shoot for about 5-7 days at no more than 65% humidity 25 degrwes celsius. Digital hygrometers work mint at helping you save those good smells.

Just harvested a crop much as you did. I'd meant to jar between 60%-65% and let it drop to 55% but work detained me and it was 55% when I jarred and worried it was too dry. Seems to be smelling up nicely though.
