Getting better. What you eating for lunch?

Lol so some may know already, but I am a decent cook, and have thought about applying to culinary school... so today i decided to challenge myself. I remember seeing something on the food network that they always make to have as a base for other foods

Its like homemade chicken stock. Which is something that i never thought id be able to make... but, i did. Lots of water, chicken bullion, onions, celery, carrots and seasonings... let it cook for 45 min, strained off the liquid, then made rice with the liquid, with a side of tilapia...
FUCK YEAH. i mean, the tilapia was so so, but i never liked tilapia anyway... The rice is one of the best things ive ever tasted... feel accomplished yo.

What you eating for lunch?

well for dinner i'll probably just cook up a steak (got a 1.23 pound porterhouse about an inch and a half thick in the fridge)
served with an ice cold coke, a vegetable, and a peice of chocolate cake for desert.. followed by a tasty cigarette and a fat shit to top it all off.

Forget lunch and breakfast.. one good meal a day does it for me.

I love being 5'9" and weighing 145 :)

i didnt eat breakfast, didnt want to, so i started cooking at 11:30 that way i could eat lunch at 12:30... i went back and ate a spoonful of the rice left over( theres a ton). Tasted way better without the tilapia and... kinda reminescent of chicken rice a roni but like with a way better taste, and no weird after taste... i guess it comes from making it from scratch?

If you boil a chicken for something else (pie, dressing, w/e) keep that water in a big jar and use that over bullion and you'll have a joygasm.

yeah? idk, everytime we boil chicken its just a plain white milky kind of water, nothing id want to keep. unless maybe like its different when you use a whole chicken, like for chicken soup?

Yup yup. From scratch isn't bullion. Lol. I do all the cooking in my house, and a true stock is made frOm boiling either a whole chicken (add whatever veggies and seasoning) or a quartered chicken.

ah, well, now i know. i was proud of myself too. sniff sniff. Ok, so ill remember that for next time. Ill call what i did semi scratch, its still out of my comfort level and something ive never done before

My wife is planning on doing like that show chopped to test my skills in the kitchen. Four main "mystery" ingredients (I won't be timed like in the show), and see what I can whip up.

Haha cool. Idk, im trying to build up my skills. Im seriously thinking about signing up for a cooking course next semester while at the same time taking my regular college courses.

Edit: I guess it's up to 5 mother sauces now, but 2 of them are white.

mayo lol. i use yogurt in sauces a lot.

i agree with grumpy, bullion is in no way from scratch.

i never liked tilapia either, bottom feeder.

i love salmon, halibut, cod.. tilapia tastes like shit. ok, so no more bullion for me until i figure out the chicken thing

as for you ganjames, im not much of a grilling person, but im pretty goos with seasonings... im sure i could figure it out, though you'd win just because i havent grilled a steak in years
