Dude what the fuck! This is my fourth time trying to innoculate my jars, second time with a PC and BOTH times moisture gets into the jars and ruins my cakes! WHY!!!!! I even completely wrapped a few of the jars in foil but it still managed to get it. Ruined all 10 cakes after I just did the same thing last week to 6 jars. Can anyone please give me some tips on what to do? I lowered the heat as low as possible while still keeping it at 15psi and it happened. PLEASE any help is appreciated :(

you got a rag at the bottom of the pot? yes?

your making sure that NO METAL RINGS, LIDS OR GLASS are directly touching the inside of pot or lid?

why are you still using foil on jars if you have tyvek filters and injection ports? (get rid of foil)

probably what the problem is, you have too many jars in the pressure cooker.

sounds like you did the temp right, barely an escape of steam? like a little whistle? not rocking and or blasting out steam, this means its too hot, also dont go over and 1 and a half or so might be cooking them too long.

I put a rag at the bottom this time but my PC also comes with a little rack for jars.

Not all of them were touching the sides maybe like 3 or 4.

I use foil because that's what I was tought but if you say no then i'll try without next time.
Won't the moisture just seep in if there's no foil?

The thing is the first time I only used 6 jars and it still happened so I doubt it's the amount of jars.

My regulator was shaking like a fuck so I lowered the temp trying to stop it but the pressure kept going down when I lowered it.
How would I go about lowering the steam?

If you have a PC its time to ditch the cakes and get some plain old nothing fancy yellow popcorn that is unpopped.Cakes are cool but in half the time you can have a jar of colinized popcorn that you mix with poo/coir 50/50 put in a tub and fruit. Yes this is bulk but for another 40 bucks you can get ounces instead on grams. Look in your in box

i use both foil, and tyvek envelopes.

make sure you pull the foil down tight, and i kind of drop my palm on the top, to make sure its good and tight.

you dont need a rag, the rack that came with it is fine.

i suspect, that your water level is too high?

water should only be about a quarter, to half way up the jars.

how high is your water level?

you want just enough to not run out and burn the pot.

I agree. Too much water in the pressure cooker. I'd also agree that instead of going with the PF cakes, use popcorn or wild bird seed, which is cheaper in bulk.

A little extra moisture won't hurt with popcorn or wild bird seed, although contams will be higher the more moisture that's not already baked into the substrate.

If you've put tape over the innoculation holes, and covered tightly with tin foil, the humidity is so high, you'll invariably have some moisture that is always gonna seep through.

So try mixing up your methods, and do a lot more reading on using popcorn or wild bird seed. Look for Lazlo's Wild Bird Seed prep...you'll thank me.

I failed numerous times UNTIL...........I started buying the pre-filled bags with the rubber gasket. Inoculate thru the rubber with a sterilized needle, easy success. I've never had a bag go bad on me. Costs a little more, for sure, but OH SO EASY.

I add a little less than 3qt's of water in my 18qt pressure cooker, I still have the slightest of clue as to why moisture is seeping in. I assure you i've put the tinfoil on very tight. I'll definitely look into the popcorn seeds and I've been contemplating using the pre-filled bags but there's just something about them I don't like. Thanks guys any help is appreciated.

I use the small rack in my 22gt presto but I only add enough water to just touch the bottom of the jars on the bottom which is only 1.5" of water. After 1.5hrs in the PC there is always some water left so it does not all steam out.

Your the person who can help since our cookers are similar. I have the 18qt presto but i'm almost positive that if I put just enough water to reach the jars that it would run out of water mid way through. I can't keep my cooker at 15psi without the regulator shaking like a mother fucker and spewing out steam. I've tried to get it to rattle maybe every 15 seconds like people here have told me but no luck.

I use a glasstop stove set one notch above med from start to finish. I was concerned about cooking all the water out in the beginning but after a few runs I always had extra water left so my runs after that have all been with 1.5" of water in the bottom and I still have at least 1/2"of water left after 1.5hrs of pressure cooking. You want the shaker to just wiggle slightly not a full blown non-stop wobble. I have read that if you cannot keep a 15psi that you have to add 30+ minutes to the time.

Running a pc at full bore rocking will burn off all the water quickly, you just want a nice slow and steady tick, tick, tick if possible. Took several tries to find my exact stove setting to keep it just lightly rocking

Put an extra level or two of jar rings under your rack to lift it higher then you can add more water without being afraid to burn it all off.

Another innovative idea I've heard of people doing instead of towels on the bottoms of pots (cause that can be dangerous) is using jar lid rings.
Maybe try using 1 or 2 coffee filters on the disc then screw the ring on, then add tin foil on top of that? When you inoculate, you won't even have to remove the filters.
It's the same as tyvek filters?

Also, something else important is not to let you temps raise above 130-135F.
Adding Verm to the top inch and wiping down the inside top of the jar will help with keeping the moisture out too. Like a water shield.

You are adding vermiculite to the top of your cakes in the jars right?

If not, maybe THAT is your problem. Or switch to rye seed as that NEEDS some water to enter the jars to work.
