Do you need to pin your branches down when low stress training or is bending them enough?
If you just bend them they'll grow back to their original shape. You could supercrop, but that's a whole 'nother story.

.
They PARTIALLY grow back to their original shape but not entirely. If they grow entirely back to their original shape, you didnt bend them enough.

Parts of branches that are not new growth but not fully mature should give you little "cracks" as you bend them. They will retain about 50% of their new shape. New growth you can bend like a rubber band and it will mostly return to growing straight up.

I havent done any bending on these in 4 or 5 days. The branches definitely have no returned to their original shape.

Before training (7 days ago) notice how the branches are growing almost straight up.

The one on the left is the same as the one in the first picture.

Without bending the branches would all be pointing almost straight up and much closer to each other.

All this being said, I dont believe bending stems is a form of LST but its also not like the HST of supercropping where the stem is actually bent over and sort of broken and has to do major repair.

Why is that I heard it was good to trim back some of the fan leaves to open it up so more light can get to bud sites
Once your plant is in flower it wont be producing any new fan leafs. If you already gave it a good trimming, it shouldnt need any more trimming. Good photosynthesis is happening in the fans which is good for the buds. Also lots of nutrients stored in the fans that the plant will pull and use for flower production.
