don't put it straight in a jar after chop, bad idea. You will get mold. Let it dry first it's common knowledge. Once they are crispy on the stem, toss em in a jar. Let em sit for a week then pop the lid and they should be ready to smoke then. If you like, you can leave them in the jar for longer periods of time to bring out more complex flavors.
