I'm going to hang the whole plant when I do my first harvest. I've heard 60°F at 60% RH until the stems holding the buds snap but the large stems holding those stems are still bendy is the perfect time to jar.

This- too often people think the early chlorophyl smell is a bad thing.
You want to dry as slow as possible so that the chlorophyl is released by the plant, thats why u smell it.
If you dry too fast the chlorophyl will get trapped in the buds and will continue to smell ‘grassy’.
ideal drying conditins are approx. 60-65 degrees Cand 60-65% humidity.
Generally dry until stems crack but dont break. Although it depends on size of buds drying.

No trimming done at all and it's drying at a pretty good rate, day 5 and stems are still a little bendy but starting to stiffen up.
I did my research last night, like I should have done before posting (sorry), and it's normal at first because the chlorophyll is breaking down.

Im calling bull shit on these two posts.
Ill keep it real no sugar coating. Your fucked. It smells like hay or grass, it wont go away. You grew it bad or harvested to early, or its a shit strain.
Many moons ago my first harvest was the same. I tried all the curing crap with no success.
My buds now never smell like hay, grass, or chlorophyll. They are dank from the chop, while they are drying, and after they are dry. No curing needed. I do cure my buds for a couple days or so to redistribute moisture from inside the bud evenly when they are dry and trimmed. It makes the smoke smoother and burn better. That's it... If I cured a bud for months it will have less flavor then the one that's been in the jar for a couple days and that s a fact.

My terps aren't breaking down... They are insanely terpy from smell to taste.
This is irrelevant anyway because I have hung dry bumper crops in garages that were 90 degrees with 90% humidity along with times it was barely over freezing with 20%. Of course, in hot and humid you have to wait much longer and much quicker in dry and cold, but the end results were always the same.. No grassy or hay smell. The hot and humid didn't get the buds to my desired moisture content, but they still burned in a joint and never smelled like the OP describes.
To answer your question, I have a whole room for drying with a dehumidifier send up for 40%rh at 60 degrees. I hang the whole plant to dry upside down for 7 to 10 days. I then remove the fan leaves, then trimmed by machine, then hand trimmed to perfection. put in gallon jars for up to 3 days and then on to the proud new owner to enjoy. A gram in a plastic bag, in the pocket of your jeans and you will stink up the whole room. I've been kicked out night clubs before because it was overpowering and never left my pocket. Never smelled hay, grass, or chlorophyll start to finish. Almost two decades doing this. Top quality nugs with the most insane terps that are loud and pronounced.

I know what works for me, so I can contribute my opinion to the OP, which he isn't going to achieve quality no matter what steps he takes now being the buds smell like hay. Cure it for months at a specific temp, with a specific RH in the jar. Willing to bet a crispy hundred it smells like hay after everything is said and done. Sad but true.
From from years of trial and error and a bit of bro-science, I have my grow dialed in to my liking.

I think you pulled it too early. If you let it ripen on the plant it smells and tastes much better then if you chop it too early. Just think of peaches or tomatoes that are harvested too early and set on the grocery store shelf to ripen. They will never taste or smell the same way as something that has ripen on the plant.

Hi mate how long was your plant in flower? Just curiousJust wanted to give you an update. After drying and trimming, the buds have no grass or hay smell and no taste of grass or hay when smoking. Smell very dank and my cousin who's a huge stoner loved the little sample I gave him. And it'll only get better with the cure.
