Can't seem to get my cure down right

My method:
Buds are hung in a carboard box with fishing line and left to dry until the stems snap when bent.

Bud is put in jars and opened twice a day for 5 days.

Buds are then opened once a day for 4 days.

Then the jars are left closed and opened every 3 days for the next weekn.

Then jarred until needed.

What do you guys do? I feel like I'm not getting a good smell back. The ash is nice and gray and burns clean. Do some strains just stay smelling kinda like grass?

Waiting on stems to snap is too dry. It's also important to control the environment you are drying in. Pitch black ~65 degrees / ~55% RH 4 - 5 days max. Smaller stems should be close to snapping and the larger ones should be bending over. Once in jars, don't open them again for 2-3 weeks unless you're looking to smoke early.

I used to have the same issue until I realized I was waiting too long to get it into the jars. If you stick your jars in a dark / warm place for a few days you should be able to get some smell back. If it's hot outside where you live, try the trunk of your car :)

I usually break the buds down well before they are ready to snap, I jar em and leave them open another couple of days put in a boveda and seal it, open them up once a day for a week or so and then a couple of times a week and then I don't open anymore once it feels dry enough and once cured remove boveda paks, simples!

I think the smell is more determined by the genetics than the curing process. This is based on my experience with a few strains. I'm not saying it doesn't help at all, just that good genetics will ensure you have a good smell and taste moreso than a good curing process.

My first few harvests were with a strain called mango. I followed the curing method using a hygrometer in a jar and let it cure for 4+ weeks. The smell was almost none and taste was not very good.

My last couple harvests have been with better genetics from some local seed companies. All I have done is hang them in a closet and let them get completely dry (takes about 5 days). RH in the room I've been hanging them in is around 25%. These buds taste 100x better and the smell in the room that I have them hanging is intense.

Try some different strains before you blame your curing process, IMO.

if its good weed it will smell great and taste great dry with no cure at all
curing in simple terms is keeping a tiny amount of moisture in the bud and letting it dry out very slowly in a confined space

until all the moisture is gone or the buds stop going spongy in the jars when you close the lids, they stay mostly crispy it will not smell or taste right takes about a month or two to taste right
as it cures it may go through lots of smells most are unpleasant to me, and unless you cure it right it will taste worse than if you had just
fully dried it slowly with no cure if you smoke it during the cure it will taste shit also

its easy you just need to let the bud go through the spoungy/crispy cycle in the jars
if its not going spongy in the jars you dried it too much before you put it in the jars
if you dry it too quick it will not taste as good
i like to dry it out in the open not in a box or confined space in about 10 days or so

leave the bud to go crispy on the outside put it in a jar with lid closed
give it a few hours all the buds should be spongy not crispy on the surface anymore
leave it like this lids closed for a day then open the jars and leave them open until the bud at the top of the jars starts to go crispy again will take a few hours in a 75f room
just keep repeating this, there is no set time to leave the jars open or closed
inspect the bud and decide how long they need to be closed or open depending on the crispy/sponginess of the bud

to be honest curing helps you store your bud in a state where it does not go too dry or taste harsh 6 months later
it only slightly improves flavor if at all
most of it is certainly genetics

if you just dry it goes dusty and tastes harsh after a few months imo

also when you get your cured buds out of the jars when they are ready to smoke
they are still a little spongy/crispy mix
it is better to leave the buds out in the air before you smoke them, leave them until they are completely crispy and can be crumbled easy but still sticky in the middle
i get a few buds out of the jars and leave them overnight for the next day
i find these taste best. its the perfect dryness

peace
