What I want now is a good recipe for al pastor. El Su makes a lovely version that contains this high bright note that I read as cloves or cinnamon or both. But the recipes I’ve found so far have neither. @curious2garden do you have a recipe that should bring me close? @Bob Bitchen I saw you made al pastor, but did your recipe include either?

oh and I would kill for their salsa roja recipe!
The one I used did use clove, no cinnamon.
It was good but missing something, just a little off, maybe cinnamon?

How was it?
I have a pic of my plate, haven't downloaded it from my camera yet. No gratuitous brown breast shot, my boy was cooking mashed potatoes when I got it out and there isn't room for two big men in the kitchen at the same time. Need to use more substantial bread for the stuffing next time, it compressed a lot when cooked. I usually buy the non flavored croutons but they were all gone by the time I went shopping. It was tasty, plenty left for turkey sandwiches.

I never saw the point in "It's my mother's recipe, so it's secret".

If it's that good why wouldn't you share it to the world?
My grandmother started cooking for people when her 7 kids were small after her husband left her during the depression. She had some good recipes, notably pie and chili. Those recipes kept them in a home and fed during the depression. So I can see why she didn't share them.
