300 watts out of wall enough for 3 plants?

Number of plants isn't important, they might be tiny or massive. Its more the area your trying to cover.
With the vipar and the panels your probably good for around 2.5x2.5ft , if it were high end white LEDs then 3x3ft+
So yeah you can have 3 plants, keep them small and within that footprint.
