Plants are not like boiling eggs where 3 Minutes give u the perfect result with the yolk still runny and the egg white nice and firm ;-) - 75 days does not mean that on that day you can go in and harvest....
Did u count from germinating or from vegging?

From sprout I’m 10 weeks and a couple days
