The watt rating of a resistor (pot) is the amount of power it can handle without burning up. This is just a control circuit for the driver; currents and voltage will be low; thus, low power. You are correct about tolerance and it doesn't really matter in this application.

No, the table shows (30Kohm / n) where n = number of drivers so 15Kohm in series with a 50Kohm pot will control two drivers.

Socket head cap screws "should" be stronger than the average pan head. Edit: that is a real flimsy design even with good fasteners. I'd recommend using round spacers (for air flow) and mount the driver over the fins using long screws.
