I don't actually eat the fish... I'm going to smoke the salmon for my inlaws. My old german neighbor says the leopard shark is probably his favorite fish and you get more action with shark. If its just about the fish brought home then salmon is probably better but the sharks put up a big fight...

Bad part is im kinda from washington, even lived at a place called salmon beach. The only salmon Ive caught was as a kid. The creek we would play at had a huge salmon run and we could just pull them out by hand. Way down the creek there was a fish ladder we would play in and slide down the dam...

What wood is good for smoking salmon? I have some really nice oak from my yard that makes a great brisket and pork shoulder but it may be too strong of a flavor for salmon. I havent had a chance to do salmon but my smoker is pretty big. I'll gladly smoke some for anyone that wants it smoked.
