out side in a thunderstorm seedlings can be under winds of up to 20 mph , so a small fan blowing is just fine . as long as the fan isnt keeping them bent over or anything its ok

seems fine flowering around 10 inchs will allow a little play room in height . you just need to find a good pheno that will stay on the short side after you start to flower , and one that will stay with in ur time lines for you pulling a plant every 2 ... so dont go throwing anything new in...

i would do 8 to 10 good size plants .... im not gonna comment on yeild cause there are to many variables to say ... but it looks like you have a plan id just go with it
