Don’t over water, back her off from light a little until she starts praying to the light. Usually a few days then she will start busting out.

Your good, the two new sprouts to the side are now your apical (main) stems. There is no set rule, I usually wait for the 6th real leaf node and top it back down to 4th. This way you have a much better target and thicker starts to your mains.
