I'd build whatever size you can have in there. Frame it up, fiberglass insulation with foamboard on the inside and out. Tape the seems.

If you don't want to build something. Buy a shed insulate it and grow in that.

I have the expoxy in my basement. It's kinda pricey, but shouldn't ever have to replace it

Just blow the walls full of insulation, either fiberglass or cellulose. You can get both at a Lowe's, cheap and easy.
