Personally I top and then LST by taping one of the top fan leaves to the side of the pot. Then I may supercrop if things get out of hand, usually if I get a little more stretch than anticipated. It's one of those things that I've gradually done now that I've gotten more comfortable with the plants.
By getting that top taped down it is making the lower branches come up for a more even canopy.. Let me take a quick pic for you.

Sorry i know they aren't the best pics, but since I just lightly bent them and didn't give them the "snap" it's low stress. Some strains/phenos will have more rigid stems that you have to give a little snap to get them to go where you want. But the end result is often similar, a more even canopy.
