Ok well that all seems fine ,
All i can say is are you watering them fully , when you water make sure it is draining out of the waste holes in the pot , make sure the pot feels heavy, they shouldn't need watering more than every 2-3 days...

one gallon? like......four quarts.......how big are these plants?
My thought as well - bigger pots !
Also, being unfamiliar with the medium you are using - I wonder if it is draining too quickly?
1) How much water are you putting into the pot?
2) How much water comes out?

Bout a water bottle but quite a bit drains out the bottom
It sounds like your media may be draining too well due to excessive pearlite etc...
Also, your 1 gallon pot is going to be too small for a mature plant - Were I you, I would repot into some good soil (super soil comes to mind) in a 4 or 5 gallon bucket that has drainage holes in the bottom.
