Nitrogen locks up at pH 5.0 and lower, but Calcium and Magnesium lock up at 6.4 and lower. pH 6.0 is too low for soil, eventually you will start getting Calcium & Magnesium deficiencies. They would probably start a couple weeks into the budding phase, when the plant starts using them more. But that could be the difference between strain and prefference.

I am surprised you haven't noticed any problems yet watering with 6.0 or lower water.
