I made some chilli yesterday and kept adding hot shit thinking more the better. We'll it's unedible---one spoon full will make you cry. But the recipe I was using wasn't hot enough. Got a good recipe or better yet what can I add to the next batch to make it hot without having the nasty hot sauce flavor or being to overpowering?

I always start with the "kits" they have in gorcery stores. There are several diff ones.. I think my fav "kit" is the "2 alarm chili kit" .. It has all the spices you need, so all you need to do is add the meat ( I use only ground turkey /ground turkey breast ) and beans and veggies of your choice. You cant really screw it up because it has the right amount of spices in sep packets.. If you want it hotter, just add more of the cayenne pepper..If you want it not so hot, add less.. SOOOOO simple.. I love chili and cornbread so I make this about 1-2 times a mnth.. Below is a pic of and link to the exact product im talking aobut > ( nevermind the "12 pack" its the best pic i could find.. You can easily get 1 package at a time at a local grocery store, not "12 packs" ) I promise you wont be dissapointed.. You can still make "homeade" chili but with all the spices pre measured, you cant really screw it up. It comes w/ enough cayenne pepper to make it either mild ,med or "2 alarm" hot lol..

I'd tell you, I really would, but I really make good chili, and I don't want anyone to know my recipe.Cuz you'd never guess what's in it.My chili isn't too damn spicy, as I get heartburn from that, but you can adjust the heat level very easily.

from the sounds of it, you added hot sauce.... never cook with hot sauce... you almost always end up with too much of a vinegar taste... instead just use ground cayenne pepper...

get generous with the onion and garlic; adds to the bite of the pepper; ground mustard has this effect also (in small quantities)... i've also found with my chilis, that a small dash of clove (and of course some cumin) gives chili that little extra something that it needs...

I have sliced jalapeno peppers and I'm thinking of putting them in a blender and mincing them up. Will this cause them to dissolve and make the chilli to hot or would it stay the same? I'm just mincing up one and half times what the recipe calls for.

Make sure you remove all the seeds and guts from the pepper. These make it hot. Plus the flesh is where the flavor is. Ha thats funny shit

I use pepers ( bell, jalapeno etc ) for flavor and cayenne pepper for heat.. Its alot easier to get the spicyness/heat just right using the cayenne for the heat.

Still too hot, but it's edible :) Had to eat a whole package of crackers with it and it still had the fire. It's going to really hurt coming out the other end :)
