Elote, Mexican street corn dip, served hot as chip dip. :)

Today, I am smoke-a-frying turkey parts. These wings and legs are about to come out of my simple brine and into the smoker loaded with apple wood chips. View attachment 5411601
Thanks for the info. I make grilled corn a lot. And have several versions of corn salad that I whip up ( just depends on the ingredients I have on hand ) . But a friend of mine makes a version he call’s “ crazy corn “ and ohh my is it crazy good, he won’t give up the recipe. I haven’t tried the feta cheese and lime juice but it is on the list, with a dash of cyanine of course. Or maybe some smoked quajillo fine ground.

Last night I made tacos from scratch and homemade tortilla chips tossed in butter garlic . This morning I took the five year old grandson on a fishing trip up the river to the state line, for breakfast and mid morning snack, I fried spam and buttermilk biscuits. For supper it was chicken wings and fries ( fish wasn’t biting today ) . Ohh and vanilla ice cream, the grandson really loves the dessert part of any meal.

I had a good day, he’s going back to school on the ninth of next month and we won’t get to see very often after that so these days are special. I hope you get to see your grandkids often.
Thanks, my youngest grand will be moving to Brazil shortly for awhile. G'kids are special :)

PS Guys don't be shocked it's ok. Her mom is from Brazil and they are looking for a second home there so she can have some time with her mom's family. I'm good with sharing, kinda.

I'm from rural Iowa, literally corn-town. The place I grew up in is surrounded by corn. The movie theater is in the middle of a corn field. Legendary Harrington sweet corn is burned into my brain and let me tell you something about this wonderful corn, it is juicy, it is packed with flavor, the kernels pop with satisfaction, ears huge with perfect rows of white and gold. It is so succulent you almost want to eat the cob, too.
I only cook corn one way, and that is a kind of gentle poaching in water seasoned with a few tablespoons lemon juice and sugar that's sat with used up whole vanilla beans.
Eat the ear plain. Melt butter or duck fat, season with salt and pepper. Slice off the cob immediately and make the most blow your mind creamed corn, all that fresh corn juice is essential for a great creamed corn.

In honor of Gary I got to ask “ how many ears can you put in your mouth at once “. I don’t know if you’ve been around long enough for that to make sense but believe it’s funny af.

Washed, froze and packaged some blueberries. Also had some fresh zucchini cake and our first sugar baby watermelon.

Then she made some blueberry crisp and had it with some icecream. The waffle cone is lined with milk chocolate (to prevent leakage) then filled with vanilla ice cream that has a vein of caramel from top to bottom. All this is encapsulated with milk chocolate on top with chunks of toffee. Aka the Yukon - great Canadian grizzly cone by Chapman's. 5 *****- would recommend.
