Last time I made a rib roast I cooked it sous vide. It looked amazing when I finished, but it looked raw inside. Everyone else thought it was delicious, I was kinda repulsed.

see, this is the only prime rib roast that i'll eat. i cook all my roasts to rare in the center, then we eat off the red center all week long, straight from the fridge with just a little mustard or horseradish on the side. it's just a roast beef, but instead of coming in plastic from the deli, you made one yourself.
