I have not found a better way to cook chicken than a rotisserie. Just finished one and it’s amazing but didn’t snap any photos. But I did just finish up some chicken stock from the bones which is a first for me. It makes the whole house smell amazing! Gonna be doing a lot more of this.

Other ways that I
might consider on par or equal to, the beer can rig on open coal is good and though it's wasteful (unless you did several birds) is the dreaded Reynolds oven bags - I generally use them for Ham and Turkey and I should have posted a pic of the one we tore up earlier this week but it was super tender and I didn't poke holes in the bag, kinda like a pressure cooker without the size limit! I guarantee if you put three chickens in one with your choice of herbs and spices and a little water, you'll be UNABLE to lift anything with bones in it; out of the bag because it's beyond falling apart and once you pick the meat, you can simmer the whole thing more if you like or add more water so your broth is ready to store.
I like 325°F for an hour and a half, and another two at 250°F with a 15-30 minute rest before going off the diving board, and I'm really tempted to get some turkey soup veggies around...
However, I'd suggest trying the bags soon!
Home made chicken broth is the whip for real chicken soup!
