Set some ground rules. "If you text me, I WILL respond, but you CAN NOT expect me to do it right away all the time. Believe it or not, I am sometimes busy for periods of time that exceed 14 minutes, and thats something youre just going to have to deal with."

Get her a hobby or something.

My ex was EXACTLY like that, and I know its 10x more annoying than you can even put into words. Controlling, manipulative, obsessive, attention needing women. It got so bad with my ex and me that I couldnt take a crap without her wondering where I was... I had to get rid of her. Hopefully you and your girl will have better luck finding something that works than I did. :D

Ive only read your first post, but it looks like your making too big of a deal of nothing. Just wait until your GF comes out of nowhere and says "I need to go to Salt Lake City to pick up the ashes of the Best lover I ever had, so much better to me than you".... while your mom is on her way to the hospital to have a 10 day long surgery, and your harvesting your plants but not trimming them because you have to deal with all the drama!
