I always thought you looked just like Lewis Black ( he makes me piss myself....love his delivery..."angry funny").....suprise.....looked up images of Lewis , low and behold............you want low light, it doesn't have to be dark, but no direct sunlight. you want a light breeze in the general area, like a fan blowing into a corner, not directly onto your rack. if the humidity is very high, like over 70%, you might want to look into a small peltier dehumidifier, if your rack is in an enclosed area like a closet. if its in a larger area, it will just take longer, and you'll have to turn them over a couple of times a day to stop mold. if you want it to dry right, you want to give it 5 to 7 days at 65 to 75F, and about 60% rh, turning it daily if its on a rack. when it starts to feel crunchy outside but still marshmallowy inside, I like to put it in a paper bag and close it up till they soften up again, then open it till they start to feel dry again, back and forth for 2 or 3 days, then into jars
