Curing helps break down the chlorophyll, iirc. It also helps the sugars and terps concentrate, iirc. It makes for a smoother and more enjoyable smoke. An old timer once told me: "Once the weed is dry enough that a joint stays lit, start the cure." If you're worried about excess moisture, silica packets are cheap, and will help, but you have to burp your jars daily. Don't leave the silica in once you're done. Bodevha packets are more expensive, but help maintain an RH level, rather than just absorbing as much moisture as they can. Just don't forget to burp your jars, and don't overfill them.
