Your assumptions are correct. You need to keep temps below 75F and humidity in the 55-65 range. If you don’t, the weed will just smell like grass and the smoke will be harsh. Been there, done that.

I dry my plants in a couple of extra bedrooms and run my swamp cooler & humidifier. I usually hang them for 5 days & put colas about a foot or so long in ostrich bags inside of 32 gallon trash cans. Opening and closing the bags slows the drying process. 8 or 9 days and then into half gallon mason jars at about 60%RH. It's a bit of work but the results are good. A pump house would be hard to control the heat & humidity. I have a noticeable smell outside of my house.
